Methode Traditionnelle
The cool, stable temperature and high natural humidity of our underground cellar provide ideal storage conditions to allow the maturation of wines in French Barriques and German barrels. Also in this traditional cellar Johanneshof’s Methode Traditionnelle Wines are made.
Using the century old traditional methode our Johanneshof Cellars Methode Traditionelle is fermented in its bottle and aged on its yeast lees for seven years with current vintage 2009 Johanneshof Cellars EMMI and 2010 Johanneshof Cellars NEW DAWN and a NV Johanneshof Cellars Blanc de Blancs.
All of our grapes are hand harvested and pressed in the whole bunch form on site using traditional Champagne juice yields. The juice is cold settled, racked, inoculated, some of the juice is fermented in oak barrels. The majority is fermented in stainless steel under temperature control using cultured yeasts.
After fermentation, the wine is blended and settled, and put back into clean oak and left in our underground cellars between 9 and 12 months prior to tiraging (bottling). At this stage yeast is added to the finished wine to deliberately encourage a secondary fermentation in each bottle.
After bottle fermentation the wine, depending on the style, is left at least 5 years on lees, then hand riddled before the yeast is removed by degorgement. This takes place at our winery in small batches to insure maximum time on lees to keep it youthful, so generally our Johanneshof Cellars Methode Traditionnelle is being degorged just prior to coming on the market.

Johanneshof Cellars 2009
Methode Traditionnelle EMMI Brut Emmi Methode Traditionnelle Brut is a cuvee of 75 % Pinot Noir and 25 % Chardonnay made from hand harvested Marlborough Grapes. Made from our Maybern vineyard at our cellar door, these vines are planted in a champagne clone of Pinot Noir on a 30 degree Northwest facing slope, Marlborough's first steep hillside vineyard. With a golden colour and tiny, persistent beads, Johanneshof EMMI is a gloriously rich and complex wine, the beautifully fragrant bouquet shows dried figs, almond, brioche, citrus and yeast characters. The palate is buttery and nutty with excellent weight and intensity. Johanneshof Cellars 2010 Methode Traditionnelle
NEW DAWN Brut New Dawn features the classic salmon colour of a traditional Methode Traditionnelle Rose. The bouquet of strawberry is attractively biscuity. 100% Marlborough Pinot Noir - aged in French oak, and hand turned and degorged on site. Part of the proceeds from the sale of this wine through our cellar door will be donated by us to our local Cancer Society to support and assist people affected by cancer in Marlborough. Johanneshof Cellars NV
Methode Traditionnelle Blanc de Blancs Brut Made in the traditional Champagne method, this Chardonnay based sparkling wine is made solely from hand harvested grapes. After the secondary fermentation in the bottle, the wine was left on its lees for seven years until degorging this year. The delicate floral nose leads to an elegant palate of citrus and stonefruit characters. The long lees contact has generated nutty and toasty flavours with very fine beads.
